Coconut Cauliflower Curry

This isn’t one of those articles that tells you a story before I post the recipe. I’ll save it for after so here ya go!

1 can of coconut milk

Chickpeas

Chopped carrots

Cauliflower

Shallot

Garlic powder

Sea Salt

Garam Masala

Curry powder

Turmeric

A bit of ground flaxseed

Ghee butter

Instructions:

In one big pot or sauce pan, you put the coconut milk in and let it heat up.

Add in the ghee butter and all the seasonings to let it simmer.

Once you see a little boil action, go ahead and add your chopped veggies and chickpeas.

All of the seasonings are to taste. I can’t tell you exactly how much to make it perfect because the perfect taste is relative. I suggest to keep tasting it until you have the “mmph” moment. I also suggest providing some rice (whichever kind you like) or quinoa to pair it with beautifully.

Here’s my thought. This is a great dish for large families, you can simply double or even triple the recipe for a good meal prep meal. For those that serve newly postpartum families, I suggest this as a freezer dish. Freezer dishes are where the meal is prepped ahead of time perhaps day of birth in bulk preferably and frozen for the family to enjoy days after. This serves as a good immediate postpartum meal as well as it provides adequate fats and vegetables to help replenish energy spent at a long birth.

My kids actually loved this and this is saying a lot, The kids are very selective, for lack of better words, these days and they’re drawn to quick simple finger foods which is perfectly fine! But sometimes I love the option of a warm cooked meal and honestly glean the smell of a kitchen that is cooking something. This did the trick though because they actually went for seconds.

The seasonings all bode well for minerals and vitamins to be established within the body’s systems. From the Turmeric’s curcumin and anti-inmflamatory effects, minerals fro the sea salt (we get ours through Azure Standard. It’s significantly cheaper and larger container), and the good fat from the coconut milk and ghee, you’re in for a nice treat.
